I have a 17 year old, 11 year old and my husband to please. What are some easy healthy meals that everyone will like?

Baked chicken. Use a rub on it for flavor. Home made cornbread or white bread stuffing[though Stove Top works just fine].

Cooked fresh carrots, put a little sugar in the water to help them keep their sweetness.

Make a veggie or fruited jello salad[Rivers likes raspberry jello with fruit cocktail], or make a cottage cheese and fruit salad. Mom made crushed pineapple grated carrot salad with lemon jello, do not use pineapple jello, icky, artificial, just use the drained pineapple juice for some of the cold liquid. This one is refreshing, and pretty and goes great with most any meat.

Or maybe an apple salad, with grapes, apples, pineapple, raisins. Just dilute the Miracle whip or mayonnaise a little bit with orange juice to make it pourable. You can use low fat mayo or MW.

Or a salad with dark greens, some vinaigrette dressing and match the dressing with a fruit. Raspberry is good, and put in some pecans or almonds for some antioxidants.

My other choice would be a really good quality pork roast, or some very lean pork chops. I have been wanting some good scalloped potatoes lately, that would be great with pork.

Rivers compromises and makes almost healthy things. Broccoli, rice and cheese casserole has 3 healthy things in it. I can ignore the cream of mushroom soup. Chili is a good thing, the beans and onions and tomatoes are good for you, the ground beef not so much. I use lean beef, and I have not done it yet, but someone told me they use ground turkey in it, that once you get the spices in the chili, you can’t tell if it is turkey or hamburger.

Beef stew, and make some baking powder biscuits and serve them with honey. Potatoes, beef, onions, carrots, and add some frozen peas near the end of cooking.
A big pot of thick vegetable soup, maybe with some potatoes in it. Maybe some Red Lobster cheesy biscuits.
River’s has catfish defrosting, and a hearty rye bread. Some very decadent cole slaw sounds good to go with it.

Can you tell River’s town has snow on the ground, and is expecting another storm day after tomorrow? I want comfort foods, hearty stick to your ribs stuff. And healthy, too. Except for the cole slaw, LOL.
