I strongly recommend “Microwave Cooking” by Richard Deacon. It must be at least 20 years out of print but is exceptionally good.

Portion Size Me: 10 Days Of Healthy & Affordable Dinners: Day #1

We call this chicken divan. We boiled a whole chicken (which is less expensive than purchasing select chicken parts) in a big stock pot. After it cooled we deboned it and the meat became the first layer of the dish. The next layer was brown rice, followed by fresh broccoli and fresh green beans. We then mixed a can of low fat cream of mushroom soup, low fat cream of chicken soup, fresh minced garlic, about a soup can of 2% milk, some slivered almonds and some reduced fat cheddar cheese. Add some salt, pepper and other spices you like to the liquid mixture and pour over the layers. Cook in oven at 400 for about 45 minutes until the almonds are toasted. This meal cost about to make but LOOK at how much it made. Thinking lunches!
