I’m trying to eat healthier and shed these extra pounds I’ve gained in the last year before it turns into a big problem. I’m not extremely overweight, but I’m scared if I keep going this way, I will be. Any healthy, low calorie food ideas would be greatly appreciated. Thanks.

I love this as a dip. It is very good.

Roasted Vegetable Dip Inspired by Ina Garten’s Roasted Eggplant Spread

2 medium zucchinis, diced into 1-inch cubes
1 medium eggplant, peeled and diced into 1-inch cubes
1 red pepper, diced into 1-inch cubes
1 yellow pepper, diced into 1-inch cubes
1 small onion, peeled and quartered
3 Tbsp. olive oil
1/2 tsp. pepper
1-1/2 tsp. sea salt, such as Maldon Sea Salt, or kosher salt
2 Tbsp. lemon juice
1 clove garlic
1 Tbsp. natural peanut butter
2 tsp. sesame oil
1/4 cup chopped parsley
Preheat oven to 400 degrees F. Toss zucchini, eggplant, peppers and onion with olive oil, pepper and sea salt. Spread in an even layer on a baking sheet. Roast 45 minutes, turning halfway during cooking. Allow to cool 10 minutes.

Place vegetables and remaining ingredients in a food processor and pulse until dip is chunky. (If you prefer a smoother dip, pulse until it reaches your preferred consistency.) Serve with pita chips or homemade tortilla chips.

I am on the Richard Simmons FoodMover diet and now that I am branching out into more healthy cooking, I want to be able to access the diabetic exchanges for more. Are there websites that can help me out?

Are there any coupon sites that do not require a cell phone or downloading a program?

The various coupon sites I’ve visited (HEB, Kroger, etc) require a cell phone (probably a smart phone, which I don’t have). They also require you to download a program my virus scanner thinks is suspicious. Are there any sites with coupons on common items that don’t require this?

All the usual ones (coupons.com for example) pretty much need a downloader. It’s not a program really, just something they use to make sure you have a limit of printable coupons. The only ones that MAY not require a program may be Walgreens, CVS, that sort of stuff. Oh! And ‘liking’ Facebook page deal coupons I don’t think require programs!

Edit: A lot of stores also have coupons and deal papers right by the front. Generally on your right hand side within 10 feet of the door. You cna just grab some of those and save the papers!

I have recently been diagnosed with a large amount of food allergies and the majority are healthy food items including soy and all legumes, peanuts, all nuts except almonds, rice, mustard seeds, sesame seeds, and a variety of other seeds, broccoli, turkey, cocoa beans, fish and seafood and this is just to the things I was tested for. It seems that most healthy cooking today includes one or more of these items and soy is found in everything. I am looking for some everyday great recipes that are healthy.

I am in an area where ther is a tourist coupon book . Basically they sell adspace in their book. I know I can do better at a better price for advertisers.

Do you think advertisers will be willing to switch. If this coupon book has already been established for years.

i think you have a good idea. but, you will have to be persistent with advertisers. be prepared to get allot “NO” before you get that first “YES”.

I’m quite fond of ramen noodles, but they are sooo fattening, so I try not to eat them too often. Does anyone know if there is a low fat variety?

probably not. i think that is all that they have going for them. if you didn’t taste fat they would probable not taste too good. i say don’t mess with a classic just enjoy them.

What healthy options are there for fruit allergies?

I’m allergic to fruit, but I can drink some fruit juices (logically but sadly, the more processed and less like the actual stuff, the more likely I am not to react). I’d like to still get my fruit servings and the benefits, but I’m not sure what my options are. I’ve been drinking Welch’s White Cherry Grape, but it has a lot of sugar.

I’m kind of at a loss. Ideas?
I can embrace the carrots. They are quite friendly.

I don’t have a list, but there are many vegetables that have a fairly high content of vitamin C. I am not a big fruit eater, as I only care for a few types, and I want them fresh. I take a multi-vitamin every day, eat my veggies and hope for the best!
