Halibut with Tomatoes and Fennel | Everyday Food with Sarah Carey

Want to know another way I beat the summer heat in my kitchen? I cook light meals that I know will satisfy my hunger but won’t weigh me down. Today’s recipe is the perfect example: It calls for 1 1/2 pounds skinless, boneless halibut filet, a mild, lean protein, which steams in just minutes over a flavorful, aromatic sauce of tomatoes, garlic and fennel. Serve that over a bed of couscous, and you’ve got a complete, healthy dinner that’s done in just 15 minutes. Magnificent! Sarah’s Tip of the Day: Buy double the amount of fennel than this recipe calls for and make twice the amount of couscous — you’ll need both for Friday’s recipe at the end of the week.
