Pasta, Garbanzos, Broccoli, and Cauliflower

Wonderful new recipe from Susan Voisin of the Fat Free Vegan Blog. She has this categorized under her "Ridiculously Easy" recipes, and boy is it ever!!

Using frozen veggies and cooking them at the same time as the pasta (in the last 4 minutes of cooking), and making a garlic and herb sauce while those cook … YUMMY!!

If you use a gluten free pasta (like this one) instead of the whole wheat pasta, the dish will be GF.

Summer Pasta with Broccoli Rabe and Croutons

Summer Pasta with Broccoli Rabe and Croutons
Healthy Vegetarian Meals

The main event this Mother’s Day dinner – I made everything but the pasta from scratch: roasted chickpeas, the bread for the croutons, the roasted garlic / onion paste – then sauteed it all up at the last minute with the cooked spelt linguine, cherry tomatoes and steamed broccoli rabe. The whole thing was finished with fresh basil, lemon zest and a touch of lemon juice!

The verdict? Mom loved it, the stepdad was ambivalent (I’ll take it as a victory, that man likes nothing I cook, and my stepbrother threw the whole thing out. That hurt, but at least the intended recipient is a fan!

Hot & Healthy Find: Ezekiel 4:9 Sprouted Whole Grain Pasta (with 15-minute Whole Foods Recipe)

hotandhealthyliving.com Hot & Healthy Find: Ezekiel 4:9 Sprouted Whole Grain Pasta (with 15-minute Whole Foods Recipe) Ive always loved pasta; its just one of those foods I dont think I could ever give up. Now that Im a busy mom with a family to take care of Ive learned to appreciate pasta for its convenience and versatility too! I wont eat the nutrient-poor white stuff though (which pretty much means no pasta at restaurants). I made the switch to whole grain pasta years ago when I started eating a whole foods diet, but in the last four or five years Ive discovered sprouted whole grain pasta. While regular whole grain pasta is still fine, sprouting takes whole grains to a whole new level. Thats because sprouting is the only way to release all of the vital nutrients stored within whole grains. The sprouting process starts by germinating whole grains in pure filtered water. This activates beneficial enzymes, which causes sprouting and releases the nutrients within the whole grain that would otherwise lay inactive. Since Im always looking to maximize nutrition whenever possible sprouted pasta is right up my alley My favorite brand is Food for Life Ezekiel 4:9 Sprouted Grain Pasta (its available in Whole Foods Market, natural foods stores and some mainstream supermarkets). And, yes, it tastes good! It has a pleasant, mild, nutty-like flavor and a slightly meaty, hearty texture. And, with 7 grams of fiber and 9 grams of protein per serving, it is a very FILLING whole food. I
