My boyfriend gets home from work between 9:30-10 pm and I usually wait for him so we can have dinner together. We don’t like to eat anything too heavy that late but still want to be full.

What are some easy, healthy recipes I can make?

No seafood or mushrooms!

fruit salad
veggie salad (you can add some grilled chicken to it)
veggie & chicken soup (with a half sandwich on the side)
wheat tortilla wraps (with lettuce,grilled chicken,tomatoes)

You can also make him a heavy lunch (his dinner) and for dinner he can have lunch… that’s what I do for my husband, he gets home late too.
