Betty’s 4th of July Strawberry-Blueberry Trifle Recipe

In this video, Betty demonstrates how to make a fresh strawberry/blueberry trifle–complete with pound cake, white chocolate pudding, and whipped topping for the top! Since it is red, white, and blue, it will be great for your 4th of July celebration! Ingredients: 1 quart fresh strawberries, washed and cut into quarters 1 quart fresh blueberries 4 tablespoons Splenda (or other artificial sweetener or sugar) 4 cups pound cake, cubed (You may use angel food cake or pound cake from the deli. If you make your own, I have posted Betty’s Perfect Pound Cake with Sugar Glaze Topping–leave off the glaze.) 1 small (or large) package white chocolate pudding mix (I used small sugar-free. You may use vanilla or banana flavor, if you can’t find white chocolate. If you use a large package of pudding mix, your trifle will be more creamy; with a small package, it will be drier.) 2 cups milk (I used skim milk.) 8 oz. frozen whipped topping, thawed Prepare your strawberries and blueberries, and place them in two separate medium-sized bowls. Sprinkle 2 tablespoons Splenda over each bowl, and stir until blended in. Reserve 1/2 cup strawberries and 1/2 cup of blueberries for garnish. Now, make your white chocolate pudding. Add 2 cups of cold milk to 1 small package of white chocolate pudding mix. Beat for 2 minutes, and set aside. In a large clear bowl, assemble your trifle. Place 2 cups cubed pound cake, followed by 1/2 of your sweetened strawberries and 1/2 of your sweetened blueberries

Leon County Commissioner Bill Proctor has some explaining to do, his colleagues say.

He was AWOL during Monday’s marathon budget workshop — a meeting in which commissioners made key decisions on how they’ll spend your tax dollars next year — and he also missed Tuesday night’s commission meeting.

Commission Chairman John Dailey said he was told Tuesday by Proctor’s aide that the District 1 commissioner was traveling at the time. Commissioner Bryan Desloge said Proctor, who was back in his office Thursday, told him he missed the meetings because he was "stuck in Atlanta."

Proctor didn’t return phone calls or an email from the Democrat.

Desloge said he’s upset Proctor missed the meetings.

"His job is to represent his district, and if he doesn’t attend the meetings, it negates any ability for him to function effectively as a commissioner," Desloge said.

Desloge said Proctor is bright and capable, but "he’s never taken this very seriously. To him, it’s a bit of a game. He could do so much if he’d take this a little more seriously."

Dailey said the commission sans Proctor "worked very well together." He said he’s been too busy with the budget to worry much about Proctor’s whereabouts.

"We are all adults," Dailey said. "I’m taking care of my business for the citizens of District 3 in Leon County. Commissioner Proctor needs to explain his absenteeism to his constituents."

Commissioner Nick Maddox said he can’t speak to Proctor’s philosophy when it comes to meeting attendance.

"I take any meeting, and especially budget workshops, very seriously," Maddox said. "And I think it’s one of the most important things — if not the most important thing — that we do as commissioners. So I make it a priority to be at each and every one of them."

Commissioner Kristin Dozier said the final budget workshop is arguably the most important commission meeting of the year.

"It is crucial for us to be there and be engaged in the process," Dozier said.

Commissioners say they’ve received emails recently from voters calling for Proctor to be removed from office or sanctioned somehow by his colleagues.

The IRS is taking money out of Proctor’s county paycheck each month until it collects nearly ,000 in unpaid income taxes. Proctor also owes more than ,000 to the Florida Elections Commission in fines from his 1998 campaign.

The number of Americans filing first-time claims for jobless benefits, already high, rose again last week.
Four-hundred and twenty-nine thousand people put in initial unemployment claims, the Labor Department said. That’s an increase of  9000 over last week’s revised figure of 420,000.

The four-week moving average, which is designed to smooth out volatility in the data, was unchanged from last week, at 426,250.

As we wait for June’s employment figures to be released next week, there’s little good news on the jobs front. Unemployment is at 9.1 percent, and employers created a paltry 54,000 jobs in May. The Federal Reserve yesterday lowered its projections for growth this year and next. It also raised its projections for unemployment.

Some people have advocated legalising dog eating so that the farming and slaughtering could be regulated. A little thought shows this to be a very wrong idea.

Jill Robinson of Animals Asia Foundation wrote:

" If approval was given to farm these dogs "humanely" the cruelty would simply
go underground – and would create a precedent for accepting dog consumption
in countries across Asia – including those where no anti-cruelty legislation
exists. Unlike other domestic animals raised for food, dogs are carnivores.
In intensive rearing situations they fight – sometimes to the death – over
water, food or even the right to lie down in cramped conditions. Dr. Les
Sims of the Hong Kong Government Agriculture Fisheries and Conservation
Department states that no country in the world has developed a humane way of
raising and slaughtering dogs and that, in their opinion, it cannot be done.
More and more people in Asia believe that dogs have earned their place in
society as companions and helpers – they want consumption of this species to

SEOUL (Reuters Life!) – Thursday was not a good day to be a dog in South Korea. That’s because it was one of the three hottest days according to the Korean lunar calendar — and dog soup is one way to beat the heat.

On "Chobok," people seeking to protect the body from overheating eat traditional healthy foods such as ginseng chicken soup, broiled eel, and "bo-shin-tang," literally "body preservation stew."

Dogs are bred to be eaten in South Korea, and advocates say bo-shin-tang, which consists of dog meat boiled in a mix of hot and strong spices and vegetables, is good for the health. It is considered a delicacy by some.

"The reason why I eat dog soup is because it boosts my energy, even when I’m most tired," said 56-year-old Shin Gwan-sup, sitting in a dog soup restaurant.

"Compared to other meats, it has more protein and less fat. I think it is healthy and clean, a more suitable meat for us."

The Korean practice of eating dog has drawn criticism from overseas for its cruelty, with French actress and animal rights activist Brigitte Bardot among some of the most vocal critics.

But Korean dog meat connoisseurs remain undaunted, with long lines forming on Thursday outside dog specialty restaurants.

Beating the heat was painful for diners this year, though, with the price of the ginseng chicken soup, or sangyetang, jumping. Severe rain has also pushed up the price of vegetables used in the soups.

Make-Ahead Food Ideas for Memorial Day and 4th of July BBQ Picnics

Like many folks on Memorial Day and Fourth of July weekends, you might be making plans to go camping, or planning a BBQ, or even going somewhere for a picnic. 

Whatever the event, if you are the one in charge of the meal planning and cooking, if time allows, please try some of my make-ahead food ideas before, so that you can have more time to relax and to enjoy yourself and your family on the actual day of the event!

Just because you are the one in charge of the planning and cooking, it doesn’t mean you have to be busy doing EVERYTHING food-related that day. Consider these make-ahead food ideas:

Make-Ahead Marinated Chicken and Steak 

Adding steak and chicken to the hamburger and hotdog menu is easy.
The prep. time for any of my marinated steak, teriyaki chicken and Thai Chicken recipes is 15 minutes at the most.  For days or weeks before, combine the marinade and meat in a freezer bag and freeze according to the recipe’s directions. Remove from the freezer the day before the event and place in the refrigerator to thaw. For a day ahead, marinate and refrigerate for 24 hours.  When your grill is pre-heated, you will be ready.

Make-Ahead Stuffed Beef Tenderloin

For a special, out-of the-ordinary indulgence, how does a beef tenderloin stuffed with spinach, Swiss cheese, garlic and mushrooms and slow cooked on the rotisserie grill sound?  Although beef tenderloin is very expensive per pound (check out your local wholesale club for the best price) it is definitely worth a once-a-year Memorial Day event! Estimate ½ lb. per person, and a five pound tenderloin will easily feed about 10 people. My stuffed beef tenderloin recipe includes make-ahead instructions for the stuffing, allowing you to make the stuffing a day ahead.

The day you are ready for the grill, rinse the beef under cold water and pat dry with paper towels.  Cut a lengthwise pocket into the side of the beef and fill with the stuffing.  Tie the beef tightly with 5 or 6 separate strings to keep the pocket closed.  Cut off the excess strings if they’re hanging.  Rub the outside of the beef with the minced garlic and season with salt and pepper.  Insert a cooking thermometer in the center in the thickest part of the beef (not the stuffing.)  Grill on a rotisserie (or bake in the oven at 375°F) until the thermometer registers rare in the center.  Do not overcook.  The ends will be more done.  Let the beef rest for 15 minutes before you cut it.  Remove the strings.  Cut into ½ inch slices. Your guests will think you labored over extravagant cooking recipes, while you too are sitting and enjoying this delicacy.

Make-Ahead Cole Slaw and Pasta Salads

My cookbook contains some easy make-ahead cole slaw and broccoli slaw recipes. Whether its broccoli salad, Hawaiian cole slaw, or healthy broccoli slaw, it is simple to make these a day ahead. Make the dressing a day ahead and refrigerate.  Assemble the other ingredients and refrigerate. To avoid a soggy cole slaw, add the dressing and toss your cole slaw right before your BBQ.

My Italian sub and macaroni pasta salad recipes can be made a day ahead and refrigerated, and these will taste delicious the day of the event.

Make-Ahead Desserts

Dessert breads are a great finger-food for a picnic or an after BBQ treat. Many of my easy dessert bread recipes like banana bread, cinnamon bread, blueberry bread or strawberry bread, allow for making ahead and freezing.

After baking two loaves of bread (many of my bread recipes will yield two loaves) wait until they are completely cooled. Next, wrap them in plastic wrap before placing them in a vacuum bag to freeze. Take them out of the vacuum sealed bags to thaw, this way the breads are already wrapped and ready for you to serve in about 4 hours.

Kids always go for the cookies, even big (adult-sized) kids! Homemade cookies are simple, make-ahead desserts that are a great finish to any picnic or BBQ.  Making Ahead is easy when you flash freeze your cookie dough. Use the flash freezing method for my cookie recipes and you will have fantastic results.  These cookie recipes include: big ginger cookies; brownie cookies; macadamia nut cookies; oatmeal cookies; peanut butter chocolate chip crackles; peanut butter kiss cookies; snickerdoodles; and everyone’s favorite, chocolate chip cookies. You can find these cookie recipes, as well as, all of the above mentioned recipes and make ahead directions in my Make-ahead Meals for Busy Moms Cookbook.
