Menu also contains 95 grams of protein and about 1500 calories. Note: Calories can be varied by adding and subtracting protein and fat, or, if your particular carbohydrate needs vary from this, by changing amounts of carbohydrate foods. All menus have essentially all essential vitamins and minerals except for calcium and Vitamin D. “Essentially” means that one particular vitamin might be a bit under one day or another. For the most part, these menus far exceed the minimum requirements. In menus where lower carb options are presented, my analysis of the nutrients other than carbs does not include this option. I snapped this photo on my way to St. John Restaurant, where I had one of the best meals of my life.

Fergus Henderson, the chef, is a proponent of using all parts of the animal, and the menu is very meat-oriented and includes various sorts of offal.

The staff at St. John were amazing. After I told them that I came to work my way through the menu, they agreed to give me smaller portions at a lower cost so that I could try more dishes.

For starters, I ate a cold salad of cooked, flaked skate in parsley which was refreshing and tasted of the sea. I also had a warm salad of chitterlings and arugula in a mustardy sauce. It may have been served with carmelized onions or garlic, or it may have been that the chitterlings themselves had some variation in flavor, between the bacony flesh and sweeter fat.

For my first main course, I had one of the most comforting things I’ve ever eaten – a thick slab of bacon under a piece of smoked eel, on top of the most buttery mashed potatoes I’ve ever had. After that I tried Old Spot, a slice of roasted ham with a roast carrot in a parsley sauce (keep in mind again that I was sampling and not eating the full portion). That was good, but I wasn’t terribly excited by it so I asked for a fifth course — venison kidney and liver, served with sweet purple cabbage. That was earthy and mysterious, and I loved it, although it was quite different from anything I’d sampled prior to this.

At this point the front of house manager stopped over and asked me if I was coming from another restaurant, since I’d done such a good job of making my way through the menu. I told him that I was there just for the pleasure of it; that I’d wanted to come from some time.

I had a glass of champagne after that — I’d abstained from drinking during the meal itself since I was still a bit tied — along with a half of a dozen Madeleines, which they baked for me especially. Hot, buttery, aromatic, perfect. I ate one and took the rest back to the hostel with me. I enjoyed them at breakfast and tea throughout the week.
