I’m a college student, and live by myself. I’m a good cook, but it’s just so hard to cook portions for one. I hate to waste food so I end up rarely cooking anything. I want to be healthy and eating out and fast food just isn’t the way to do it. So I want to start cooking for myself again. Does anyone know any recipes that are good for one person, doesn’t have to be too quick and easy. Thanks!

Roasted Vegetable Dip Inspired by Ina Garten’s Roasted Eggplant Spread

2 medium zucchinis, diced into 1-inch cubes
1 medium eggplant, peeled and diced into 1-inch cubes
1 red pepper, diced into 1-inch cubes
1 yellow pepper, diced into 1-inch cubes
1 small onion, peeled and quartered
3 Tbsp. olive oil
1/2 tsp. pepper
1-1/2 tsp. sea salt, such as Maldon Sea Salt, or kosher salt
2 Tbsp. lemon juice
1 clove garlic
1 Tbsp. natural peanut butter
2 tsp. sesame oil
1/4 cup chopped parsley
Preheat oven to 400 degrees F. Toss zucchini, eggplant, peppers and onion with olive oil, pepper and sea salt. Spread in an even layer on a baking sheet. Roast 45 minutes, turning halfway during cooking. Allow to cool 10 minutes.

Place vegetables and remaining ingredients in a food processor and pulse until dip is chunky. (If you prefer a smoother dip, pulse until it reaches your preferred consistency.) Serve with pita chips or homemade tortilla chips.

I’ve been eating like absolute crap for the past few days. Domino’s pizza, pizza, homemade burritos, Taco Bell, Lasagna, spaghetti and meatball sandwich, frozen pizza, etc. I have terrible heartburn, and I’m feeling horrible. Tonight, I’d like a light, healthy, and easy dinner. Any suggestions?

One healthy dinner will not undo the damage from what you have been eating. Educate yourself to eat a healthy diet all the time. If you had an expensive vehicle would you use dirty oil and dirty fuel filters etc? Some of us treat our cars better than we treat our bodies. Go to the library or go on-line for a healthy diet. So for tea tonight eat fresh veggies with some wholemeal pasta. Make it yummy with herbs and garlic. Sorry for being so negative.
