If you feel like putting a little work in, here’s my favorite lava cake recipe. Chocolate cake that is firm and moist on the outside, but still gooey chocolate on the inside. Just serve it with a big scoop of vanilla ice cream and the people there will be begging you for your secret.

6 oz. Semi-Sweet Baking Chocolate (or 70% dark chocolate bar, your choice)
6 oz. Butter (diced, room temperature)
3 Eggs
1/2 cup Granulated Sugar
1/3 cup Flour
1 TSP Vanilla Extract *optional
Butter for Ramekins
4 Ramekins (this makes 4 6-8 oz Ramekins (medium cakes)

Preheat oven to 350°F
1. Melt chocolate on low flame in a double boiler. Take off of flame.
2. Stir in diced butter until it melts and combines completely
3. In another bowl, beat eggs and sugar, until it starts to whiten.
4. Stir in the melted chocolate, then flour.
5. Butter 4 ramekins and pour in your chocolate batter.
6. Cook for about 10 minutes, or until the outside appears firm enough to handle.
7. Tip ramekins upside down, gently scraping a thin knife around the inside of the Ramekin if necessary, and gently place the cake onto dessert plates and serve.
You may garnish with fresh fruit (strawberries work well) and of course, vanilla ice cream.
