Ingredients 2 lbs of potatoes, peeled and cubed 1/2 cup of mayonnaise 1 tbsp of apple cider vinegar 1/8 tsp of ground black pepper 1/2 cup of celery, thinly sliced 1/2 cup of red onion, chopped 2 eggs, hard cooked, peeled and chopped 1/4 cup of sweet relish salt and pepper, to taste chives (for garnish) Instructions 1. Add the potatoes to a 4-qt. sauce pot, cover with water, and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes or until tender. 2. Drain and cool slightly. 3. In a large bowl, combine the mayonnaise, apple cider vinegar, pepper, celery, onion, eggs, and relish. Fold to blend all the flavors. 4. Add the cooked potatoes to the bowl and mix all the ingredients together. Season with salt and pepper. 5. Add a sprinkle of sliced celery and chives and serve. Video Rating: 4 / 5
