With 8-year-old Olivias assistance, Gloria Smith (Gigi to her granddaughter) prepares a dish she calls Plantation Casserole. Gloria, who is hyperglycemic, has been making it since her kids were little, because she wanted to prepare something healthy. This recipe, if developed today, would not be named Plantation Casserole, nor would it be deemed especially healthy. But neither of those things matters between Gloria and Olivia; what matters is how hard you pack the cheese, whether theres nasty garlic in there, and how difficult it is to chop pecans.

On the stove-top: the chicken and sweet potato in its creamy mustard sauce with fennel, garlic and lemon thyme, ready to be mixed together with the caramelised onions. This proved to be a definite "keeper" – yum!

Hrm. I realise the caramelised onions appear to be cooking in a burnt-bottomed pan but they really weren’t – it was just the balsamic vinegar. 🙂

This was pretty good — think turkey loaf with bulgur as the binder — but needed a little something to make it worth repeating. Now, I did omit the powdered beef bouillon and used low sodium tomato sauce in order to reduce the salt in this recipe. While I cooked the bulgur in (low sodium) vegetable broth to add more "taste" back in, I most certainly underestimated the amount of seasoning needed in this dish. I’m thinking a healthy dose of McCormick Salt Free Garlic & Herb Seasoning or Tabasco might improved the taste considerably.

The serving sizes are pretty generous (4 servings from an 8-inch square baking dish) or realistic, depending on how you want to call it. 5WWP/serving

This recipe was derived from a recipe from Linda’s Low Carb (genaw.com but was changed due to taste and items in the house. My wife loves this recipe! Ingredients: 2 pounds Sausage 3 cups Roast Chicken or Turkey 1 Medium Onion, Chopped 1 Medium Green Pepper, Chopped 2 stalks of Celery, Chopped 1 Medium Head of Cauliflower 8 oz. Cream Cheese 8 oz. Cheese, Shredded 1/2 tsp Black pepper Paprika Makes 10 servings. Cook covered 30 minutes @ 350 degrees, and 10-15 minutes uncovered. This tasty casserole, recipe from Dr. John McDougall, consists of a bottom layer of three kinds of beans, mixed with onions, corn, and tomato sauce. This is topped with a middle layer of white beans pureed with salsa and other flavorings into a saucy topping that is spread over the base layer. It is topped with a bag of grated potatoes, and then baked.

Once baked, the potatoes make for a thick, crunchy topping over a spicy, saucy, bean layer.
